How to Test Eggs

Testing eggs for freshness is sometimes necessary, especially when you've bought a new carton without realizing you still have some eggs from your last shopping trip. If you're shy about cracking your eggs straight into a pan without knowing how fresh they are, there are a couple different techniques for testing them. Knowing how to test eggs doesn't take long, keeps you from biting into a spoiled egg unexpectedly and prevents you from even using the bad ones.

  1. Quick Test

    • 1

      Crack the egg into a bowl carefully so as not to break the yolk.

      Check the surface of the yolk. If it is perky and bulbous in the slippery white of the egg, then it is fine. If it is flattened, with wrinkled skin, or if it breaks upon hitting the bowl, then it isn't fresh.

      Pour the egg straight from the bowl to your skillet for a fried egg. Alternatively you can beat it in the bowl for scrambled.

    Floating Test

      Fill a 2 qt. bowl with fresh tap water.

      Place an uncooked whole egg into the bowl of water.

      Watch to see if the egg floats or not. A fresh egg will sink to the bottom due to the inability for air to permeate the shell. An egg that is losing its freshness will start to float because air is penetrating the thinning shell.
