Preheat your oven to 350 degrees. Spray the inside of a 9-inch by 9-inch cake pan with non-stick cooking spray.
Add the applesauce and sugar to a mixing bowl and cream it by whipping it with a whisk until a creamy consistency forms. In this recipe, you do not need lard, shortening, butter or any other fat ingredient because the applesauce serves as the light, moisture providing alternative.
Whip in the eggs. This will turn the consistency of the creamed applesauce and sugar into a slimy, frothy substance. Add the sour cream and mix thoroughly.
Sift in the salt, baking soda and flour. Beat the contents of the bowl thoroughly until a smooth batter forms. It should be lump-free and a creamy off-white color.
Add 1 cup of optional add-ins such as raisins, dried cranberries, pecans, walnuts, chocolate chips or even chunks of fresh apples and other fruit. Stir thoroughly.
Pour the finished cake batter into the greased cake pan. Place the pan in the oven and let it cook at 350 degrees for 30 minutes or until it has risen and is golden brown. Insert a toothpick into the center and remove. If the toothpick is clean, the cake is done.
