Use poker chips as bennies. The advantage of using poker chips over the official Pinnacle branded bennies is that they are not game-setting specific. Use your poker chips in Weird War II, Solomon Kane, or Slipstream settings without distracting the players with bennies adorned with inappropriate imagery.
Assign poker chips as condition markers. For example, place a white 1-inch chip under the effected character's mini to indicate shaken; a red one to indicate wounded. Place the chips in front of the PCs or have players place them on their sheets, in the "Wounds" panel. Use other colored chips to mark other conditions such as invisible, ongoing damage, stunned and charmed.
Use poker chips as NPCs on the battle mat. This is a low-cost alternative to armies of minis for large-scale battles. Keep the mat neat by using 1-inch chips to ensure each "NPC" only takes up one square.
Transform poker chips into money or other resources. Paint them gold or use them as is to indicate gold pieces, pirate booty, credits, denarii or whatever fits your setting. You can also use them to keep track of other expendable resources such as manna, magic points, stamina or whatever you are using for your magic system.
