Design and Support
Decide on the length of the ice cream stand that you would like to build. Make it wide enough to have a minifigure stand inside it with equipment (or the illusion of equipment) as the ice cream vendor. Use a long, flat and wide rectangular platform (plate) brick to form the floor. Build in a rectangular pattern, using long 1-by-10 or 1-by-12 bricks.
Stack LEGO window pieces, frames or window frames upon the base to provide a view inside of the ice cream stand. Leave an open space in the front that is wide enough for your LEGO minifigure to eventually "work" out of. In this space, place a 4-by-4 plate to act as a service counter. This flat tile can be covered with a series of flat tiles to give it a smooth, counter-like appearance.
Connect the two walls separated by the service counter with a long brick (1-by-4 or larger) and build the walls above the windows to the same height.
Inside your Stand
Build assorted square or rectangular structures to act as refrigerators and soft-serve dispensers. Refrigerator and cooler doors can be made using hinged bricks, if desired.
Using white 1-by-2 and 1-by-4 bricks, build two identical rectangular boxes. Stack them together and separate them with two 1-by-2 bricks on one long side so that it looks like the refrigerator with a 1-by-2-size gap running through the center.
Build white rectangular boxes with no tops to act as ice cream coolers. Fill them with LEGO barrels to imitate ice cream buckets.
Use white flat tiles for the counter tops.
Choose appropriate LEGO minifigures to occupy your LEGO ice cream stand. If unavailable, build some from mismatched minifigure parts in your LEGO collection. A minifigure in white with a white cap will pass as an ice cream vendor. LEGO capes turned backward serve as excellent aprons. Choose other minifigures to act as customers.
Place all of your appliances and minifigures inside the ice cream stand to see if everything fits properly. Arrange the inside elements of your stand to your liking before adding the roof.
Roof and Accessories
Construct the roof of your ice cream stand on top of the existing structure, using long and rectangular (2-by-4, 2-by-8) bricks. Stack them on top each other in a diagonal fashion so that if several were stacked together, they would rise at a 45-degree angle.
Stack your roof three bricks high. Locate a plate that fits the roof and attach it.
Adorn the flat roof with flat tile bricks arranged in a color pattern. Black and white tiles in a checkered pattern make an excellent ice cream stand roof.
Adorn your rooftop with LEGO flagpole and flags. LEGO also makes fruit bricks, such as bananas. You also could add a LEGO palm tree to your ice cream stand.
