Make a list of all of the times during the event that you want to dedicate to photography. If it is a wedding, you can break down the day into categories like getting ready, ceremony, first kiss, bridal party, family pictures, reception and cake-cutting ceremony.
Within each of these categories, make a list of each photograph you would like to have taken. For example, if you want pictures during the ceremony of a wedding, make a note that you want a picture of the groomsmen and the bridal party walking down the aisle, the flower girl, the ring bearer and the bride walking down the aisle.
Make a list of some of the candid shots you would like to have taken throughout the night. While the candid shots are inherently pretty difficult to plan, you can note that you want the photographer to be available to take pictures of couples dancing, eating and socializing.
Take your complete list of photo shots and arrange them as chronologically as possible. This will help the photographer keep on track throughout the course of the event.
Give this shot list to your photographer in advance so she can have an idea of what you expect from the event. However, keep in mind that your photographer is a professional and will probably have some other photos in mind.
