How to Make a Cotton Lettuce Bag

In "The Joy of Cooking" Marion Romerbauer says that to make a good salad, a salad-maker should be "an abolitionist for moisture." Rid your salad greens of all excess moisture by placing them in a lettuce bag made from a cotton pique dishtowel. The thick fabric absorbs water and its texture keeps the absorbed moisture away from the surface of the leaves.

Things You'll Need

  • Cotton pique dishtowel
  • Sewing machine
  • Matching thread
  • Scissors
  • 1/4-inch cotton cord, 24 inches

Instructions

    • 1

Fold down 3/4 inch along the long side of a cotton pique dishtowel.

    • 2

Sew the casing down by machine-stitching 1/2 inch away from the folded-down edge.

    • 3

Fold the dishtowel in half by bringing the short sides together, with the folded-down casing on the outside. The casing will be at the top of the bag.

    • 4

Sew the open side and the bottom of the bag together, starting just below the casing. Sew 1/4 inch from the edge of the bag. The fold will form the other side of the bag.

    • 5

Stick a safety pin through a 24-inch-long piece of 1/4-inch cording, 2 inches from the end. Use the pin to thread the cord through the casing.

    • 6

Remove the pin and knot the two ends of the cord together.

    • 7

Turn the bag right side out.
