Order quail eggs. Place in an incubator and adjust the humidity to 80 percent and temperature to 100 degrees Fahrenheit. Place the small end of the egg down. Turn each egg 30 degrees F. everyday. The time it takes the eggs to hatch depends on the breed of quail.
After the quail hatch place them under a 100-watt heat lamp. Keep the temperature at 100 degrees F. Decrease the temperature five degrees every week.
Always begin quail chicks on starter feed with high protein. After eight weeks, switch to feed designed for the purpose of the quail such as breeding or eating.
Once the chicks are fully feathered move them to a wire quail pen. The pen should have a wire floor and roof so wildlife can not kill them. Pens should also have a door the breeder can get inside to remove quail and eggs.
To process the quail, use pruning shears or sharp scissors to quickly cut off the quail's head. Let the body bleed out, then dip each bird in 150-degree F. water for five seconds. Skin each bird and chill. Before cooking be sure to remove any pin feathers left on the bird.
