One Hole Technique
Grasp the egg in one hand and aim the pointed end toward you. Puncture it very gently with the tip of a pin or sewing needle.
Position the angled edge of the coffee straw to the opening you just created in the egg. Carefully insert the coffee straw.
Suck slightly at the other end of the straw. Do this very gently so the straw can begin the suction action to grab the yolk and white of the egg.
Pull the straw by one end out of the egg as you point it downward over the bowl. As you slide the straw out it will hold onto the yolk and white and pull it out in a slimy string from the bottom of the egg. This takes a little practice and you may have to use two or three eggs before you perfect this technique.
Two Hole Technique
Hold the egg in one hand with either end of it facing outward. You're basically holding it sideways by its center.
Prick a hole at either end of the egg with the pin or needle. Do this carefully so as not to break the egg.
Insert the pointed end of a coffee straw into one of the pin holes.
Aim the other end of the egg over the bowl and firmly blow on the free end of the coffee straw. The insides of the egg will slowly begin to bubble out of the other end of the egg into the bowl. Discard the egg insides or prepare them in a meal if you wish.
