Add the uncooked ground beef to a 4 qt. mixing bowl.
Add the onion, garlic and cooking sherry to the bowl.
Crack a large egg into the bowl. Add the breadcrumbs.
Mix the contents of the bowl with your bare hands, thoroughly.
Roll about 2 tbsp. of the mixture between the palms of your hands to create a single meatball. Repeat this until the mixture is gone.
Add the olive oil to the skillet and put it on the stove on a medium-high heat. Add the meatballs. Cover and cook for four minutes.
Remove the cover and flip the meatballs over. Cook for an additional four minutes. Reduce the heat to a simmer and cover the pot again. The cooking sherry will release from the meat, and the alcohol will evaporate and leave a tasty glaze over the meatballs.
