Use a play to stop the blitz. For instance, any play that has the quarterback in "shotgun" position will be more likely to avoid a blitz because the quarterback is located farther back than usual. Other plays that are helpful for avoiding the blitz are "Screen" and "Turmoil," as they keep a mass of players near the quarterback to block incoming sacks.
Get rid of the ball quickly to avoid the blitz. Instead of waiting for the receiver way down the field to open up, throw the ball to a closer receiver if you can see incoming sackers. Alternatively, you can choose to run up the center with the ball, which will occasionally confuse blitzers.
Use the spin trick to thwart tacklers. Tap Z twice right before the sack and your quarterback will spin deftly, knocking any nearby defenders to the ground. This can be used to buy a bit more time to throw the ball or decide to rush.
Create your own play in the Custom Plays mode to counter a blitz with precision. To make your custom play strong against blitzes, try leaving additional players (receivers, running backs, etc.) on the line. In "NFL Blitz," these players will act as blocking linemen when faced against a blitzing defender. Also try Shotgun position for the quarterback in your Custom Play. These should allow some extra time against a blitz.
Use tricks, if all else fails. Plays with fake hand-offs work to distract defenders from the quarterback. "Fake" plays such as fake field goal attempts and fake punts also work, as defenders re-position themselves to counter the anticipated play. If all else fails, try the "Split" play, and run the quarterback straight up the center. The blitzers running around the left and right of the line will find themselves behind the line as the quarterback streaks for the end zone.
