Speak with the owner of the Hotel Delfino, who will allow you access into the hotel. When you are inside, jump and stomp down on red switch that is directly in front of you. This begins the "Red Coins in the Hotel" quest.
Collect the first coin directly north of the red switch. Keep heading north until you reach the stairs to the second floor. Turn right and enter the women's washroom. The second coin is inside this room.
Leave the washroom and head straight across into the men's washroom. Use the ledge on the far end of the room to jump onto the second floor of the Hotel Delfino.
Enter the room that connects with the second floor bathroom and spray the painting in the room with your water cannon. When the ghost shows itself, jump towards it and through the painting. The third red coin is located on the other side of the painting.
Return to the previous room through the painting and jump on the bed. This will launch you up to the third floor of the hotel. Leave this room to the east and go into the pool area. On the opposite side of the pool is the fourth red coin.
Double back to the room next to the pool and head through the room's southern exit to the room with the fifth red coin. Continue to explore this room until you locate a bed. Jump on it to the next floor of the hotel.
Head right and continue down this path until you see a crack in the floor. Smash through the floor with a stomp and into the room below. Spray the poster on the wall to bust a hole in it and then jump through to reach the sixth coin.
Jump back through the hole in the wall and stomp through the off-colored tile on the floor to fall through. Head north and grab the seventh coin.
Leave the room through the only exit and you will come across the eighth red coin. Grab it then head to the entrance of the hotel to pick up your Shine.
