Beat the game on every difficulty level. Beating the game on any level unlocks the Sith Master difficulty. There is an Achievement for beating the game on each difficulty level, as well as Achievements for completing each level. You also earn Achievements for earning each ending (the Dark and the Light.)
Defeat 100 enemies with each type of combo. This can be really easy or really difficult, depending on your play style. If you want to earn all of these, vary your fighting moves.
Use the Force a lot. You can earn three Achievements for racking up 250,000, 500,000 and 600,000 Force Points on a given level.
Destroy everything! You earn Achievements for killing 200 Wookiees in the prologue, killing 12 Stormtroopers in the prologue, defeating 500 Imperials, killing 150 Stormtroopers, destroying 35 Droids, destroying 10 Walkers, killing 6 Rancors and killing 25 Jawas or Ugnaughts.
Complete all the Training Room modules and lessons. You'll want to wait until late in the game to do this, otherwise you won't have all the lessons available.
Get a Frenzy bonus. This is easiest to do with Darth Vader, in the prologue, but can really be done anywhere there are a lot of low-level mooks hanging around. The TIE Fighter factory is also a great place to do this.
