You can tell how customers feel by the mood bars above their heads. Serve angry customers first. Every time a customer leaves unhappy, you lose points and money. Earn bonus points by successfully remembering regular customers' usual orders. And beware of thieves. They steal the money you leave on the counter. They give themselves away by snickering before stealing. If your money does get stolen, you can still get it back if you click on the criminal before he leaves your shop.
